Coconut Cream Pie

This is one of my hubby's favorite desserts.

Coconut Cream Pie

Ingredients
  • 1 prepared and baked pie crust, cooled to room temperature
  • ¾ cup sugar
  • ¼ cup cornstarch
  • 2 cups half and half
  • 4 egg yolks
  • 3 Tablespoons butter
  • 1¼ cup shredded sweetened coconut
  • 1½ teaspoons vanilla extract
Coconut Whipped Cream Topping
  • 2 cups heavy whipping cream
  • ½ cup sugar
  • ½ teaspoon vanilla
  • ½ teaspoon coconut extract
Garnish
  • toasted coconut
Instructions
  1. In medium sauce pan, combine sugar and cornstarch. Add half and half and egg yolks and whisk until well combined. Bring to boil over medium heat, stirring constantly. Boil 1 minute and remove from heat. Stir in butter, coconut and vanilla.
  2. Pour into medium bowl, cover with saran wrap directly on the filling itself to avoiding a sticky film on top. Let sit for 30 minutes.
  3. Spoon coconut mixture into pie crust and careful speed to evenly distribute. Cover and refrigerate for 30 minutes or until set.
Coconut Whipped Cream Topping
  1. In a medium mixing bowl beat whipping cream at high speed. Gradually add sugar, vanilla and coconut extract. Beat until stiff peaks form. You don't want them to be soft but you don't want them to become butter either :)
  2. Spread evenly over pie and sprinkle the top with toasted coconut.

Cheesy Jalapeno Bacon Bread

Although I haven't tried this one yet, I'm sure it'd taste great on either my Pizza Crust Mix or on a loaf of gluten free  French Bread

Cheesy Jalapeno Bacon Bread

This recipe is cheesy, flavorful and has a delicious kick of heat with a cream cheese spread to cool it down... it truly is INCREDIBLE and will be one of the most talked about appetizers!

Ingredients
  • 1 loaf french bread, baked and sliced lengthwise, or Pizza Crust
  • 16 ounces cream cheese
  • 1 Tablespoon minced garlic
  • ½ cup cooked and chopped gluten free bacon
  • 2 JalapeƱos, thinly sliced
  • 1½ cups grated Mozzarella cheese
Instructions
  1. Preheat oven to 375 degrees F.
  2. In a medium bowl, microwave cream cheese for 1½ minutes on high. Stir until smooth. Add garlic and bacon and stir until well combined.
  3. Spread mixture over bread and sprinkle top with cheese. Top bread with sliced jalapeƱos.
  4. Line a cookie sheet with foil and place bread on foil and bake for 15 minutes or until cheese is melted and bubbly.
